HOW GRANDMA USED TO MAKE THESE CRAZY POTATOES
My grandma used to make these stuffed potatoes like no one else.... So I'm gonna share her recipe. Sorry granny!
In simple and easy steps, so everybody can become a 'Chef' for a day. Here we go:
INGREDIENTS
3 pounds of yellow potatoes
half a cup of chopped onions
1 pound of ground beef, turkey or chicken would help to ( personalize it yourself)
1/2 cup of raisins
Corn starch for dusting
3 boiled eggs
5 eggs blended in a mixer; store it in a large dish for later
salt, pepper, a tea spoon of cumin
2 tea spoons of mashed garlic
black Mediterranean olives
PREPARATION
boil the potatoes in salty water, no need to peel off yet.
make sure they are tender; pierce with a fork for softness.
While boiling the potatoes, get a sauce pan and:
heat oil and add the garlic, chopped onions on low fire.
add the ground beef and see the nice cooking and color as you stir constantly
2 minutes after, add salt, cumin and pepper...smelling good huh?
Peel the potatoes and get it doughy as you smash with a fork, sort of a pizza dough.
add flour(corn starch) , and get a nice volume
get consistent individual oval shape dough pieces that
you can hold on the palm of your hand.
'drill' a hole in these football shaped doughs and insert the browned beef
add raisins, a couple of olives for flavor and a chopped boiled egg
This submarine like stuffed potato gets coated in flour and
is submerged into the bowl with blended eggs.
Fry the stuffed potato on the Sauce pan until you see a wonderful tasty colorful stuffed potato.
A crispy a golden potato will make you proud!! Careful with not getting too dark.

The secret in keeping the dough from breaking into a messy pre-stuffing is the corn starch. Hope you liked it as much as my hunger. Lol!

The real thing is yummier that a pic. Is like an empanada with a different taste; the groundbeef plus the raisins and the eggs will soak the mashed potatoes in a way that you won't stop eating after the first bite.

That was cute of you..! here is a quick one: cut onions..actually chop them up in little squares..add it to a bowl with 4 squeeze lemons..add Tuna and mix..add pepper and pieces of parsley and stirr...This will keep you focus more than ever. You can boil potatoes or rice and french fries if you want. Lot's of Omega and other secrets. Writing more tonight dear..will tweet//
